I used to buy this sauce regularly from Marks & Sparks before realising how simple it is to make. In fact you can knock up this sauce from fresh in the time it takes to boil the water and cook the pasta.

Chop your onion roughly and soften with the garlic in a large pan. Add the tin of chopped tomatoes, basil and a little vegetable stock (just enough to add a little flavour to your sauce without making it too runny). Cook for about 5-10 minutes, then remove from the heat and add a large spoonful of mascarpone cheese. Use a hand blender to create a smooth creamy sauce. Season to taste.

Tomato & Mascarpone sauce works particularly well with ravioli and tortellini.
