This soup is ridiculously easy. So easy it seems a bit of a cheat calling it a recipe.

First, chop your onions and soften them in oil in a medium-to-large sized saucepan. Add chopped garlic, and then break up your broccoli and add it to the pan. For vegetable stock I use the Marigold Vegetable Bouillon. The flavour of the soup comes from your stock, so it is worth getting the good stuff, and the Marigold is a particular favourite of mine. Put a heaped desert spoon of the vegetable stock powder into the pan, then cover with boiling water.

Let the pan gently boil for 15 minutes and then use a hand blender to turn it into soup whilst still in the pan. Done.
